R.I.B.A.C.S.
Russian Imperial Barrel-Aged Christmas Stout: brewed once a year between Christmas and New Year and aged in various barrels for a minimum of 6 months, often longer. The same beer goes into each barrel; completely different beers come out. The year on the bottle refers to the year the beer was brewed. We have a rotating selection of different vintages from our range of R.I.B.A.C.S. See the descriptions of each bottle, or ask us for recommendations!
2016 - Bourbon
Winner of a gold medal from Concours de Lyon as well as "best winterbeer of the Netherlands". The bourbon barrel lends a silky-sweet whiskey flavour to a 10.6% stout. 8.5% | Barrel no. unknown

2021 - Glenrothes '08 Olorosso
Glenrothes on an Olorosso sherry barrel is an excellent combination for our stout: a very thick, aromatic R.I.B.A.C.S. that smells of cocoa, tobacco, fruity whisky and a little smoke. Initially the beer was too intense, so we blended it with some smoked stout for balance. 9.4% | Barrel no. unknown

2022 - Cognac '00
Candy character from the fruity cognac; also a booziness, though still balanced and pleasant. The stout remains in the body, which is still great despite the higher alcohol. 13.1% | Barrel no. 272

2022 - Mystery Rum
A mystery barrel, we think it's an English rum aged on a bourbon barrel. The barrel was likely re-fired, as more roasted (rather than wood) notes come through. The sweetness and spiciness is characteristic of rum. A light tobaco aroma comes through. 11.7% | Barrel no. unknown

Lots of berries in the aroma, though a good amount of spiciness too. The spices come through the in the palette too, as well as tannins and a slightly sour finish nicely matching the sweet mouthfeel. 13.1% | Barrel no. 69

2019 - Bunnahabhain-Moine '11
Bunnahabhain is usually known as non-peated Islay whisky, although Moine versions on the other hand do contain a good amount of peat. Despite being a hogshead, the influence of the barrel has a nice intensity due to the young whisky. Lots of liquorice and wood flavours. 10.6% | Barrel no. 704498

2018 - Edradour '07
A typical Highland whisky with an intense aroma dominated by its fruity and estery character. Edradour is one of the smallest distilleries in Scotland. 11.16% | Barrel no. 327

2018 - Caroni '98
One of our most prestigious barrels. Caroni rum comes from Trinidad, and the distillery closed down in 2002. In 2004 the warehouse full of barrels was found, and a barrel comes available only now and then. This barrel contained a dark brown rum, distilled in 1998 and filled in 2018. This stout has an amazing sweet, thick rum aroma and taste. Molasses; ripe fruit; a real beauty. 10.86% | Barrel no.41

2018 - Linkwood '95
The woody notes of this hogshead are more pronounced. The whisky is super smooth, so we aged the beer for longer for balance and perfection. 10.82% | Barrel no. 5961

2017 - Ledaig '10
Ledaig is quite a peaty island whisky. The use of peated barley malt makes that peat very present in this stout, especially the aroma. The barrel was also an old bourbon barrel, which the Ledaig spent 7 years in. 12.42% | Barrel no. 700390

Jamaica exports a lot of rum, but not all are as special as our Moneymusk barrel. The rum spent 9 years in this old bourbon barrel, giving a lot of red fruit aroma to the stout. 12.59% | Barrel no. 7

2017 - Fiji Rum '04
Much about this barrel is unknown, perhaps because it's quite old! The rum spent 14 years on this old bourbon barrel. We don't know which distillery produced this rum, so a lot of information is unavailable to us. You should expect a sweet and warming aroma, full of ripe fruit. The flavour is spicy and powerful, with the stout accents coming through at the back of the mouth. 12.33% | Barrel no. 14
